When to buy LL at busy times (holidays)
i have watched Rob’s videos about which parks you need to by LLMP for : MK and HS but If I’m
going at a crazy busy time (Easter) should I also purchase at AK or Epcot?

If your budget allows then go for it at AK and Epcot, you can get away with not having it but given you're going at a very busy time you may be in for some long waits if you don't.
